Coordinated by Catherine Ravel (INRA GDEC), GlutN aims to study the diversity of non-digestible interactions between proteins (glutenins and gliadins), responsible for non-coeliac and non-allergic gluten responsible for non-coeliac and non-allergic glutensensitivity (NCGS), in different varieties of wheat, aswell as their impact on the bread baking process and digestion.
